Is the symmetry symbol still in ASME Y14.5?

No. ASME Y14.5-2018 removed symmetry. Use position for a center plane between two features of size, or profile of a surface for a surface relationship.

Symmetry went for the same reason as concentricity: it was a median-point control that cost more to verify than it was worth, and position already covers what it was reached for.

If you are holding a drawing that cites the 2018 standard and carries a symmetry callout anyway, the callout is not defined by the standard the drawing claims to follow. That is a question for the customer, and the answer belongs on a deviation rather than in somebody's head.
